Carrot Cake Pancakes

The best carrot cake pancakes ever. Stuffed with walnuts, shredded carrots and spices.

Ingredients:

  • 150 g plain flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • ½ tsp allspice
  • 1 egg
  • 2 tbsp brown sugar
  • 100 g carrots, grated
  • 1 tsp vanilla extract
  • 240 ml milk
  • 1 tbsp orange juice
  • 20 g walnuts, chopped
  • 100 cream cheese
  • 2 tbsp icing sugar
  • 5 tbsp orange juice

Method:

Stir together flour, baking powder, soda, cinnamon, nutmeg, ginger and allspice. Add egg, brown sugar, vanilla, milk, orange juice, walnuts and carrots. Mix well.

Heat the oil in a frying pan over a medium heat. Add the batter and cook for two minutes. Flip the pancake over and cook for a further two minutes on the other side, until golden.

Mix together cream cheese, icing sugar and orange juice. Drizzle all over pancakes. Enjoy!!!!

Nalesniki ” Ciasto Marchewkowe”

Skladniki:

  • 150 g maki
  • 1 lyzeczka proszku do pieczenia
  • ½ lyzeczki sody
  • 1 lyzeczka cynamonu
  • 1 lyzeczka galki muszkatalowej
  • 1 lyzeczka imbiru
  • ½ lyzeczki zmielonego ziela angielskiego
  • 1 jajko
  • 2 lyzki brazowego cukru
  • 100 marchewki, startej
  • 1 lyzeczka ekstraktu z wanili
  • 240 ml mleka
  • 1 lyzka soku z pomaranczy
  • 20 g orzechow wloskich, posiekane
  • 100 g sera kremowego
  • 2 lyzki cukru pudru
  • 5 lyzek soku z pomaranczy

Wykonanie:

W misce wymieszac razem make, proszek do pieczenia, sode, cynamon, galke  muszkatalowa, imbir, ziele angielskie. Dodac jajko, cukier, wanilie, mleko, sok z pomaranczy, orzechy i marchew. Wymieszac dokladnie.

Patelnie z olejem rozgrzac na srednim ogniu. Dodac ciasto nalesnikowe i smazyc 2 minuty, odwrocic na druga strone i smazyc kolejne 2 minuty.

Ser, cukier puder i sok z pomaranczy wymieszac razem. Nalesniki podawac z polewa z sera kremowego. Smacznego!!!!

Orange Chicken

Simple orange chicken. Sweet, citrusy and tangy it’s better than most Chinese restaurants.

Ingredients

  • 2 large chicken breasts, cut into 1 cm pieces
  • 1 ½ tbsp soy sauce
  • 1 ½ tbsp water
  • 5 tbsp sugar
  • 5 tbsp white vinegar
  • orange zest
  • 1 egg
  • 1 tsp salt
  • black pepper to taste
  • 2 tbsp oil
  • 65 g + 1 tbsp corn flour
  • 32 g plain flour
  • 60 ml water
  • 1 tbsp ginger root, minced
  • 1 garlic, minced
  • ½ red chili pepper, chopped
  • 3 spring onions, chopped
  • 1 tbsp rice wine or white wine ( optional )
  • 1 tsp sesame oil

Method:

For orange sauce: in a small bowl mix together soy sauce, 1½ tbsp water, sugar, white vinegar and orange zest. Leave for later.

In a second small bowl mix together egg, salt & pepper.

In a third small bowl mix 65 g corn flour with plain flour.

In a fourth small bowl dissolve 1 tbsp corn flour with 60 ml water.

Heat oil in a wok. Dip chicken pieces in the egg mixture ( second bowl ) then in flour ( third bowl ). Fry until golden and crisp , about 4 minutes. Fry in small batches.

Clean wok and heat for 10 seconds over high heat. Add 1 tbsp oil, minced ginger and garlic and fry about 10 seconds. Add chili and spring onions and fry 10 seconds. Add rice wine ( or white wine ) and fry for 5 seconds. Add orange sauce ( first bowl ) and bring to boil. Add fried chicken, mix well then add water with corn starch. Fry for a few seconds. Stir in sesame oil. Enjoy!!!!!!!!!!

Kurczak w Pomaranczy

Skladniki:

  • 2 duze piersi z kurczaka, pokrojone w 1 cm kawalki
  • 1 ½ lyzki sosu sojowego
  • 1 ½ lyzki wody
  • 5 lyzek cukru
  • 5 lyzek octu
  • skorka z 1 pomaranczy
  • 1 jajko
  • 1 lyzeczka soli
  • pieprz do smaku
  • 2 lyzki oleju
  • 65 g maki kukurydzianej
  • 32 g maki pszennej
  • 60 ml wody
  • 1 lyzka swiezego imbiru, zmielony
  • 1 zabek czosnku, zmielony
  • ½ papryki chili, pokrojona
  • 3 cebule dymki, pokrojone
  • 1 lyzka wina ryzowego lub bialego ( opcjonalnie )
  • 1 lyzeczka oleju sezamowego

Wykonanie:

Na sos z pomaranczy: w malej misce wymieszac sos sojowy, 1½ lyzki wody, cukier, ocet i skore z pomaranczy. Odstawic na pozniej.

W drugiej malej misce wymieszac jajko, sol i pieprz.

W trzeciej malej misce wymieszac make kukurydziana z pszenna .

W czwartej malej misce wymieszac 1 lyzke maki kukurydzianej z 60 ml wody.

Rozgrzac wok z olejem. Kawalki kurczaka moczyc w jajku ( druga miska ) a nastepnie w mace ( trzecia miska ). Smazyc az nabiora zlocistego koloru i beda chrupkie, okolo 4 minuty. Smazyc kilka kawalkow kurczaka na raz.

Wyczyscic woka i rozgrzac przez 10 sekund nad wysoka temperatura. Dodac 1 lyzke oleju, imbir i czosnek, smazyc 10 sekund. Dodac chili i dymke i smazyc kolejne 10 sekund. Dodac wino i smazyc 5 sekund. Dodaj sos z pomaranczy ( pierwsza miska ) i doprowac do zagotowania. Dodaj usmazonego kurczaka, wymieszaj i dodaj wode z maka kukrydziana. Smaz kilka sekund. Polej olejem sezamowym, gotowe. Smacznego !!!!!!!!

Orange And Chocolate Tart

Just try it! The orange filling is divine. But be careful with custard (orange filling) my first attempt ended with scrambled eggs.

Ingredients

  • 375 g pack sweet shortcrust pastry
  • 2 tbsp cocoa powder
  • flour for dusting

For the orange filling

  • 5 medium oranges, zest and juice kept separate
  • 200 ml double cream
  • 4 eggs, beaten
  • 85 g caster sugar

For the chocolate drizzle

  • 85 g dark chocolate ( 70% cocoa)
  • 100 ml double cream
  • 2 tbsp golden syrup

Method

Put the pastry into a food processor, add the cocoa, pulse until combined, the knead on a floured surface until evenly brown.

Use to line a 23 cm fluted tart tin, and prick the base with a fork. Chill for 30 minutes.

Heat the oven to 200 ° C. Line the pastry case with baking parchment. Fill with baking beans and bake for 15 minutes. Remove the beans and parchment, then bake for 10 – 15 minutes more until the pastry feels dry all over. Leave to cool.

For the orange filling, strain the orange juice, then measure 250 ml into a saucepan. Add the cream and bring to the boil. Whisk the eggs and sugar in a bowl. Then gradually whisk the hot cream into the mix. Return the custard to the pan and cook for about 5 minutes whisking on a medium heat. Should be thick enough to coat the back of a spoon.

Strain into a jug, whisk in the zest and pour the custard into the pastry case. Cool and chill ideally over night.

Melt the chocolate with cream and golden syrup until smooth. Spoon over the tart. Done!
