Halloumi and mango, what a delightful combination ! Quick, delicious and good for you.
- mango, skinned & cut into thick slices
- juice ½ lime
- 1 tsp olive oil
- 1 aubergine, cut into thick slices
- halloumi, cut into thick slices
- 1 large roasted red pepper, sliced
- handful rocket salad
- 2 tbsp natural yoghurt
- 1 tbsp mayonnaise
Drizzle the mango slices with the lime juice.
Mix together yoghurt and mayonnaise.
Heat a griddle pan. Sprinkle the aubergine slices with olive oil and fry for 3-4 minutes on each side. Set aside, keep warm. Next fry the halloumi on each side until brown lines are visible.
Now mix everything in a large salad bowl and enjoy !!!!! Really delicious 🙂
