Coconut and Lentil Curry

If you are looking for an easy dinner, this coconut and lentil curry is for you.

Ingredients:

  • 1 tbsp oil
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 5 garlic cloves, minced
  • 2 tins chopped tomatoes
  • 1 tsp ground ginger
  • 1 tbsp turmeric
  • 1 tbsp sea salt
  • 200 g red lentils
  • ½ tsp chilli
  • 1 tin coconut milk
  • 4 small potatoes, cubed
  • 720 ml water

Method:

Heat the oil in a large pan. Add the cumin and coriander and fry about 1 minute. Add minced garlic and fry another minute. Next add tomatoes, ginger, turmeric, chilli and salt. Cook for 5 minutes. Add lentils and water and bring it to a boil. Cover and simmer for about 40 minutes. Stir from time to time. Add chopped potatoes and coconut milk and simmer for 10 – 15 minutes. Enjoy !!!!

Curry z mlekiem kokosowym i soczewica.

Skladniki:

  • 1 lyzka oleju
  • 1 lyzka zmielonego kminku
  • 1 lyzka zmielonej kolendry
  • 5 zabkow czosnku, zmielone
  • 2 puszki pomidorow, pokrojone
  • 1 lyzeczka zmielonego imbiru
  • 1 lyzka kurkumy
  • 1 lyzka soli morskiej
  • 200 g czerwonej soczewicy
  • ½ lyzeczki chili
  • 1 puszka mleka kokosowego
  • 4 male ziemniaki, pokrojone w kostke
  • 720 ml wody

Wykonanie:

Rozgrzac olej w garnku, dodac dodac kminek i kolendre i smazyc okolo 1 minute. Dodac czosnek i smazyc kolejna minute. Dodac pomidory, imbir, kurkume, chili i sol. Gotowac przez 5 minut. Dodac soczewice i wode, doprowadzic do zagotowania nastepnie zmniejszyc temperature i przykryc garnek pokrywka i gotowac w niskiej temperaturze okolo 40 minut. Mieszac od czasu do czasu. Dodac ziemniaki i mleko kokosowe i gotowac kolejne 10 – 15 minut. Smacznego !!!!

Roasted New Potatoes with Creamy Sauce

Perfect side to any dish roasted new potatoes with creamy sauce.

Ingredients:

  • 500 g new potatoes, washed
  • 200 g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt & pepper
  • pinch of chilli flakes
  • 250 ml vegetable stock
  • 125 ml double cream
  • handful chopped parsley

Method:

Roasted new potatoes with creamy sauce

Preheat oven to 220° C.

Wash potatoes then tip into large pot, cover with cold water and season with salt. Bring to the boil and cook about 10 minutes then drain. In a large bowl mix together potatoes, mushrooms, minced garlic, olive oil, vinegar, chilli flakes and salt & pepper.  Next tip into a tray and roast 30 minutes.  Remove from oven.

To a large frying pan add stock and cook about 5 minutes. Next add roasted potatoes with mushrooms and cream and cook 2 minutes. Garnish with chopped parsley. Enjoy!!!!!!!!!!!!!!!!

Skladniki:

  • 500 g mlodych ziemniakow, umyte
  • 200 g pieczarek, pokrojone w talary
  • 2 zabki czosnku, przecisniete
  • 1 lyzka oliwy
  • 2 lyzki octu balsamicznego
  • sol & pieprz
  • szczypta platkow chili
  • 250 ml wywaru
  • 125 ml smietany
  • garsc posiekanej natki pietruszki

Wykonanie:

Piekarnik nagrzac do 220° C.

Ziemniaki umyc i wlozyc do duzego garnka. Zalac zimna woda, posolic i gotowac okolo 10 minut. Odcedzic. W duzej misce wymieszac ziemniaki, pieczarki, czosnek, oliwe, ocet balsamiczny, platki chili i doprawic sola & pieprzem. Wylozyc na blaszce i piec 30 minut. Wyciagnac z piekarnika.

Do duzej patelni dodac wywar i gotowac 5 minut. Nastepnie dodac pieczone ziemniaki z pieczarkami i smietane i gotowac 2 minuty. Posypac posiekana pietuszka. Smacznego!!!!!

 

 

 

Baked Sweet Potato

Warm, comforting and healthy. Baked sweet potato with chickpeas and other goodies.

Ingredients:

  • 2 large sweet potatoes
  • 1 tin chickpeas
  • ½ tbsp olive oil
  • ½ tsp each : ground cumin, ground coriander, cinnamon, paprika
  • salt

For sauce:

  • 60 g humus
  • ½ lemon juice
  • 1 tsp dill
  • 3 garlic cloves, minced
  • water

For topping:

  • 100 g cherry tomatoes, halved
  • handful parsley, chopped
  • 2 tbsp lemon juice

Method:

Preheat oven to 210° C.

Sweet potatoes cut in a half. Toss chickpeas with olive oil, spices and salt. Spread on a baking tray. Place sweet potatoes face down on the same tray. Bake about 35 minutes.

For the sauce mix humus, lemon juice, dill, garlic cloves and enough water so you can pour like a sauce.

For topping mix tomatoes, parsley and lemon juice.

Remove potatoes from oven, mash inside with fork. Top with the chickpeas, pour over sauce and scatter tomato salad. Enjoy!!!!!!!!!!!!

Pieczone Slodkie Ziemniaki

Skladniki:

  • 2 duze slodkie ziemniaki
  • 1 puszka ciecierzycy
  • ½ lyzki oliwy
  • ½ lyzeczki kazdego: mielonego kminu, mielonej kolendry, cynamon, papryka
  • sol

Na sos:

  • 60 g hummus
  • ½ soku z cytryny
  • 1 lyzeczka koperku
  • 3 zabki czosnku zmielone
  • woda

Na salatke:

  • 100 g pomidorow koktajlowych, przekrojonych na pol
  • garsc pietruszki, posiekana
  • 2 lyzki soku z cytryny

Wykonanie:

Rozgrzac piekarnik do 210° C.

Ziemniaki przekroic wzdluz. Ciecierzyce wymieszac z oliwa i przyprawami i sola. Rozlozyc na blaaszce. Na tej samej blaszce wylozyc ziemniaki przekrojona strona w dol. Piec okolo 35 minut.

Na sos wymieszac hummus, sok z cytryny, koperek, czosnek i wystarczajaco wody aby zrobil sie lejacy sos.

Na salatke wymieszac pomidory, pietruszke i sok z cytryny.

Wyciagnac ziemniaki z piekarnika, widelcem podusic miazsz. Na kazdy nalozyc ciecierzyce, polac sosem i posypac pomidorami. Smacznego!!!!

Mexican Quinoa

Quick, easy, tasty and you need only one pan!

Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 green chili, minced
  • 170 g quinoa
  • 240 ml vegetable stock
  • 1 can black-eyed bean, drained
  • 1 can chopped plum tomatoes, drained
  • 1 can sweet corn, drained
  • 1 tsp chili powder
  • ½ tsp cumin
  • salt & pepper to taste
  • 1 avocado, diced
  • juice of 1 lime
  • 2 tbsp chopped coriander

Mexican quinoa

Method

Heat olive oil in a large frying pan. Add minced garlic and green chili and fry about 1 minute.

Stir in quinoa, beans, tomatoes, sweet corn, chili powder, cumin and vegetable stock. Season with salt & pepper. Bring to boil, cover and reduce heat. Cook about 20 minutes. Then stir in avocado, lime juice and coriander. Enjoy!!!!!!!!!!!!!!!!!!!!!!!!

Rozgrzej oliwe na patelni. Dodaj zmielony czosnek i chili i smaz okolo 1 minuty.

Dodaj kasze quinoa, fasole, pomidory, kukurydze, ostra paprtke, kminek i wywar warzywny. Dopraw sola i pieprzem. Doprowadz do zagotowania, przykryj patelnie i gotuj na malym ogniu okolo 20 minut. Dodaj awokado, sok z limonki i kolendre. Smacznego!!!!!!!!

Spinach And Sweet Potato Tortilla

Ingredients

  • 300 g spinach leaves
  • 8 tbsp olive oil
  • 2 large onions, thinly sliced
  • 1 kg sweet potatoes, peeled& thinly sliced
  • 2 garlic cloves, chopped
  • 8 large eggs
  • salt & pepper

Method

Put the spinach in a colander and pour over boiling water. Leave for later.

Heat 3 tbsp olive oil in a large non stick frying pan. Fry onions until soft but not coloured. Add another 3 tbsp oil and potatoes and garlic. Mix with onions, season well, cover and cook over low heat for about 15 minutes until potatoes are tender. Stir occasionally.

In a large bowl whisk the eggs. Add cooked potatoes with onion and mix together. Add spinach to the mix.

Add 2 tbsp oil to frying pan and pour the sweet potato and egg mixture. Cover and cook about 10-15 minutes over low heat until the base is golden brown. Turn the tortilla over ( put a plate face down onto a pan and flip it over). Slide the tortilla back into the pan and cook further 10 minutes. Enjoy!!!!!!!

Tortilla ze szpinakiem i slodkimi ziemniakami

Skladniki

  • 300 g szpinaku
  • 8 lyzek oliwy
  • 2 duze cebule cienko pokrojone
  • 1 kg slodkich ziemniakow (lub zwyklych), obrane i pokrojone w cienie plastry
  • 2 zabki czosnu, pokrojone
  • 8 duzych jajek
  • sol & pieprz

Sposob

Wloz szpinak do durszlaka i przelej gotujaca sie woda. Odstaw na pozniej.

Rozgrzej 3 lyzki oliwy w duzej teflonowej patelni. Usmaz cebule az bedzie miekka i bez koloru na malym ogniu. Dodaj kolejne 3 lyzki oliwy i ziemniaki z czosnkiem. Wymieszaj z cebula, dopraw do smaku, przykryj pokrywka i gotuj na malym ogniu okolo 15 minut az ziemniaki beda miekkie. Mieszaj od czsu do czasu.

W duzej misce roztrzep jajka. Dodj ziemniaki z cebula i wymieszaj. Dodaj szpinak do mikstury.

Dodaj kolejne 2 lyzki oliwy do patelni i wlej miksture z ziemniakow i jajek. Przykryj pokrywka i gotuj okolo 10 -15 minut na malym ogniu az spod bedzie zlocisto brazowy. Na tortille poloz talerz o srednicy patelni. Odwroc tortille i zsun spowrotem z talerza na patelnie. Smaz kolejne 10 minut. Smacznego!!!!!!!!!!

Baked Pumpkin Fondue

Ultimate one-dish entertaining: baked pumpkin fondue. AMAZING !

Ingredients

  • 1 whole pumpkin
  • roasted potatoes. breadsticks to serve
  • 100 g Emmental cheese, grated
  • 100 g Gruyère cheese, grated
  • 100 g Cheddar cheese, grated
  • 1 tbsp cornflour
  • 100 g crème fraîche
  • 1 onion, chopped
  • 1 garlic clove, crushed

Method

Heat the oven to 180° C. Prepare pumpkin : cut off a lid and scoop out seeds. Put the lid back on and bake the whole pumpkin for about 1 hour.

In a large bowl mix the grated cheese with cornflour. Remove the pumpkin from the oven. Increase the oven temperature to 200° C. Layer up the cheese, crème fraîche, onion and garlic inside the pumpkin, do not cover with lid. Put back into the oven and bake another 30 minutes, until cheese is melted. Enjoy!!!!

Skladniki

  • 1 dynia
  • serwuj z pieczonymi ziemniakami lub paluszkami chlebowymi
  • 100 g sera Emmental, starty
  • 100 g sera Gruyère, starty
  • 100 g sera Cheddar, starty
  • 1 lyzka maki kukurydzianej
  • 100 g crème fraîche
  • 1 cebula, pokrojona
  • 1 zabek czosnku, obrany i zduszony

Wykonanie

Rozgrzej piekarnik do 180° C. Ostrym nozem odetnij czubek dyni i wyjmij miazsz ze srodka. Cala dynie przykryta czubkiem wstaw do piekarnika i piecz okolo 1 godziny.

W duzej misce wymieszaj ser z maka. Gdy dynia bedzie gotowa wyciagij z piekarnika. Zmien temperature na 200° C. Na spod dyni wsyp ser, pozniej crème fraîche, cebule i czosnek. Nie przykrywaj czubkiem dyni, wstaw tak do piekarnika na 30 minut albo do momentu gdy ser bedzie roztopiony. Podawaj z pieczonymi ziemniakami , chlebowymi paluszkami lub grzanami. Smacznego!

Baked Potatoes

Transform basic baked potato with melted cheese topping. Great comfort food!!!

Ingredients

  • 4 medium baking potatoes
  • 1 tbsp olive oil
  • 25 g butter
  • 1 onion, chopped
  • 250 g lardons
  • 2 tbsp double cream
  • 200 g Gruyère cheese, grated
  • 4 tbsp chopped parsley

Method

Heat the oven to 200°C. Prick the potatoes all over with a fork, then rub with half the oil, salt and black pepper. Bake in the oven for about 1 hour 20 minutes. (If you have got microwave with oven function – jacket potato – then the baking time is 20 minutes!!!)

Heat the remaining oil and half the butter in a frying pan. Add onion and gently cook until soft and golden. Remove from the pan. Add the lardons and fry until crisp.

Halve each potato lengthways ( careful, they’re hot! ), then scoop out most of the potato into a bowl, leaving a potato skin shell with a thin layer of potato. In the bowl mix the potato with butter, cream, lardons, onion, ¾ of cheese and half the parsley. Season with salt and pepper. Spoon back into the potato shells and top with the remaining cheese. Return to the oven for 10-15 minutes until melting and golden. Sprinkle with the remaining parsley.

Muffin Tin Frittatas

Tasty, quick and easy

Ingredients

  • 8 eggs
  • 125 ml cream
  • salt & pepper
  • 125 g grated cheese
  • 2 spring onions, chopped
  • 125 g sun dried tomatoes, sliced
  • 100 g feta, diced
  • 250 g spinach, chopped
  • 2 tbsp parsley, chopped

Method

Preheat the oven to 190° C. Grease a 12- hole muffin tin.

In a large bowl, whisk together the eggs, cream, salt & pepper until well combined. Add all the other ingredients and mix well.

Spoon the mixture into the prepared muffin tin, filling each hole right to the top. Bake for 20 minutes or until puffed, golden and firm in the touch.
