Eccles Cakes

Classic Eccles cakes.

Ingredients:

For the pastry:

  • 175 g butter
  • 225 g plain flour
  • pinch of salt
  • 125 ml cold water

For the filling:

  • 50 g butter
  • 100 g muscovado sugar
  • 175 g currants
  • 50 g mixed peel
  • zest 1 lemon
  • 1 tsp ground cinnamon
  • pinch ground cloves
  • 1 egg white
  • 2-3 tbsp granulated sugar, for sprinkling

Method:

For the pastry freeze the butter. Add flour and pinch of salt to the large bowl. Grate the frozen butter into the flour. Mix and add cold water. Bring the dough together. Wrap in foil and chill.

For the filling melt the butter in a saucepan. Add muscovado sugar, currants, mixed peel, zest, cinnamon and cloves. Mix and leave to cool.

Heat the oven to 200° C.

Roll out the chilled pastry. Cut out 6-8 rounds about 15 cm across. Place a good heaped tablespoon of mixture in the middle of each round. Gather the pastry around the filling and squeeze it together. Flip them over so the smooth top is upwards and pat them into a smooth round. Flatten each round. Brush with egg white then sprinkle with sugar. Slash the top of each cake 3 times. Bake 25 minutes. Enjoy!!!!

Ciastka Eccles

Na ciasto:

  • 175 g masla, zamrozone
  • 225 g maki
  • szczypta soli
  • 125 ml zimnej wody

Na nadzienie:

  • 50 g masla
  • 100 g cukru trzcinowego
  • 175 g suszonych porzeczek
  • 50 g kandyzowanych cytrusow
  • starta skorka z cytryny
  • 1 lyzeczka cynamonu
  • szczypta zmielonych gozdzikow
  • 1 bialko
  • 2-3 lyzki bialego cukru

Wykonanie:

Do duzej miski wsypac make i dodac sol. Zamrozone maslo zetrzec na tarce do miski z maka. Wymieszac i dodac zimna wode. Wyrobic ciasto, zawinac w folie i schlodzic w lodowce.

W malym garnu roztopic maslo. Dodac cukier, porzeczki, skandyzowane cytrusy, skorke z cytryny, cynamon i gozdziki. Wymieszac i odstawic do wystudzenia.

Piekarnik rozgrzac do 200° C.

Schlodzone ciasto rozwalkowac i wyciac kola o srednicy 15 cm ( okolo 6-8 ). Na srodek kazdego kola nalozyc nadzienie, 1 duza lyzka. Uformowac na ksztalt bulek i lekko splaszczyc. Odwrocic ciastka tak aby zlepiona czesc byla pod spodem. Posmarowac bialkiem i posypac cukrem. Kazde ciastko naciac na srodku 3 razy. Piec 25 minut. Smacznego!!!!!
