Baked Pumpkin Fondue

Ultimate one-dish entertaining: baked pumpkin fondue. AMAZING !

Ingredients

  • 1 whole pumpkin
  • roasted potatoes. breadsticks to serve
  • 100 g Emmental cheese, grated
  • 100 g Gruyère cheese, grated
  • 100 g Cheddar cheese, grated
  • 1 tbsp cornflour
  • 100 g crème fraîche
  • 1 onion, chopped
  • 1 garlic clove, crushed

Method

Heat the oven to 180° C. Prepare pumpkin : cut off a lid and scoop out seeds. Put the lid back on and bake the whole pumpkin for about 1 hour.

In a large bowl mix the grated cheese with cornflour. Remove the pumpkin from the oven. Increase the oven temperature to 200° C. Layer up the cheese, crème fraîche, onion and garlic inside the pumpkin, do not cover with lid. Put back into the oven and bake another 30 minutes, until cheese is melted. Enjoy!!!!

  • serwuj z pieczonymi ziemniakami lub paluszkami chlebowymi
  • 100 g sera Emmental, starty
  • 100 g sera Gruyère, starty

  • 1 lyzka maki kukurydzianej
  • 100 g crème fraîche
  • 1 cebula, pokrojona
  • 1 zabek czosnku, obrany i zduszony

Wykonanie

Rozgrzej piekarnik do 180° C. Ostrym nozem odetnij czubek dyni i wyjmij miazsz ze srodka. Cala dynie przykryta czubkiem wstaw do piekarnika i piecz okolo 1 godziny.

W duzej misce wymieszaj ser z maka. Gdy dynia bedzie gotowa wyciagij z piekarnika. Zmien temperature na 200° C. Na spod dyni wsyp ser, pozniej crème fraîche, cebule i czosnek. Nie przykrywaj czubkiem dyni, wstaw tak do piekarnika na 30 minut albo do momentu gdy ser bedzie roztopiony. Podawaj z pieczonymi ziemniakami , chlebowymi paluszkami lub grzanami. Smacznego!

Pumpkin Soup

Why not try this warming soup made from roasted pumpkin.

Przepis w jezyku polskim na dole.

Ingredients

  • 4 tbsp olive oil
  • 2 onions, chopped
  • 1 kg pumpkin,peeled, deseeded & chopped
  • 700 ml chicken stock
  • 4 tbsp double cream

Method

Preheat the oven to 180° C.

Place the pumpkin in a roasting tin, drizzle with olive oil and season with salt & pepper. Bake in oven about 40 minutes until soft.

Heat 2 tbsp olive oil in a large pan saucepan. Gently cook onions for 5 minutes, then add the pumpkin and cook for another 5 minutes.

Pour stock into the saucepan with pumpkin and season with salt & pepper. Bring to the boil. Simmer for 10 minutes and add 2 tbsp of double cream. Puree with a hand blender.

Serve scattered with croutons and drizzle with double cream!!!

Sposob

Nagrzej piekarnik do 180° C.

Pokrojona dynie rozloz na blaszce polej oliwa, posol i popieprz. Piecz okolo 40 minut,az dynia stanie sie miekka.

W duzym garnku rozgrzej oliwe. Podsmaz cebule ( okolo 5 minut), dodaj upieczona dynie i gotuj kolejne 5 minut.

Do garnka z dynia dodaj bulion, dopraw sola i pieprzem do smaku. Gdy zacznie sie gotowac obniz temperature i dus 10 minut. Dodaj 2 lyzki smietany. Calosc zmiksuj recznym blenderem.

Zupe mozna posypac grzankami, pestkami dyni i skropic smietana!

Mozzarella Meatballs

This recipe is a quick and easy idea for a midweek dinner.

Ingredients

  • 450 g turkey mince
  • 125 g mini mozzarella
  • 100 g breadcrumbs
  • 1 tbsp fresh basil, chopped
  • 1 tbsp marjoram
  • 500 ml chicken stock
  • 1 x 400 ml can chopped tomatoes
  • salt & pepper
  • pasta
  • 1 tbsp olive oil

Method

In a large bowl mix together mince meat, basil, breadcrumbs, marjoram and about 50 ml chicken stock. Make 12 -14 balls. Flatten each meatball and press a piece of mozzarella into the center. Gather the meat around and make sure is sealed.

Heat olive oil in a large frying pan. Brown the meatballs. Then add the chicken stock and chopped tomatoes and bring to the boil. Season well. Simmer about 25 minutes until cooked through. Serve with pasta. Enjoy!!!!!

Sposob

W duzej misce wymieszac mieso mielone z bazylja, majerankiem, bulka tarta i okolo 50 ml wywaru. Zrob 12-14 kotletow, w srodek kazdego wloz po kulce mozzarelli.

Rozgrzej olej na duzej patelni i obsmaz mielone z kazdej strony na brazowy kolor. Dodaj pozostaly wywar i pomidory.Dopraw sola i pieprzem. Doprowadz do zagotowania a pozniej zmniejsz ogien i dus okolo 25 minut, az beda ugotowane. Podawaj z makaronem. Smacznego!!!!!!!!!!!!!!!!

Tuna Sandwich

This is my favorite tuna sandwich and i’m happy to share with you! If you do not like tuna you can try salmon.

Ingredients

  • 2 cans tuna in brine
  • 1 tin sweetcorn
  • ½ diced red pepper
  • 1 diced onion
  • 1 diced avocado
  • ½ seedless cucumber, diced
  • chili or chili sauce (optional)
  • mayo
  • salt & black pepper

Method

Drain the water from the tuna then put it into a bowl. Add sweetcorn, red pepper, onion, avocado, cucumber, chilli, mayo. Mix together and season well. Enjoy!

Tunczyka odsaczyc. W duzej misce wymieszac razem z tunczykiem kukurydze, czerwona papryke, cebule, awokado, ogorek, chili (jesli uzywasz), majonez. Doprawic sola i pieprzem. Smacznego!!!!!

Yeast Cake With Mix Berry And Crumble

OK this is official, the yeast cake can’t go wrong. You can use any fruits. I used frozen.

This recipe my mum uses all the time.

Ingredients

For cake

  • 250 ml caster sugar
  • 250 ml sunflower oil
  • 50 g fresh yeast
  • 5 eggs, beaten
  • 250 ml milk, lukewarm
  • 4 x 250 ml plain flour

For topping

  • 500 g fruits
  • 100 g flour
  • 50 g butter
  • 60 g sugar

 

  • 100 g icing sugar
  • juice 1 lime (small)

Method

In a large bowl mix together yeast with sugar until runny. Then add oil, eggs, milk and sift flour. Mix together and cover and let rise in a warm place until doubled, about 40 minutes.

To make crumble put flour and sugar into a bowl, add melted butter, mix all together. Then rub until the mixture resembles breadcrumbs.

Preheat the oven to 170°C.

Spread the dough onto a greased baking tin ( i used the large what is in the oven ). Arrange the fruits over the dough then sprinkle the crumble over the fruits.

Bake for 45 minutes or until a skewer inserted into the center of the cake comes out clean. Leave to cool then mix together icing sugar with lime juice and pour over the cake !

Chicken Kiev And Potato Gratin

This recipe is simple and good for Sunday dinner, celebrations ( i survived my firs kickboxing class and this was my reward ). I like this Chicken Kiev because is very juicy and the flavour is just right. Together with Potato Gratin simple delicious 🙂

Makes 4

Ingredients

For Chicken Kiev

  • 4 skinless chicken breasts
  • 200 g breadcrumbs
  • 75 g parmesan, grated
  • 3 eggs, beaten
  • 100 g flour
  • salt
  • 2 tbsp paprika
  • 2 tbsp sunflower oil

For garlic butter

  • 4 garlic cloves, crushed and chopped
  • 2 tbsp chopped parsley
  • 100 g butter
  • juice ½ lemon

For potato gratin

  • 1 kg potatoes, peeled
  • 400 ml double cream
  • 3 garlic cloves, grated
  • ground white pepper
  • salt

Method

I first baked potato gratin and after 30 minutes i added chicken Kiev, at this point i increased the oven temperature to 180°C.

  • Thinly slice the potatoes, about 2 mm thick.

Pour the cream in a sauce pan, add grated garlic and season well with salt & pepper. Bring the cream to the boil the remove from heat and leave for later.

Layer the gratin dish with a third of the potatoes, pour over a third of the cream. Repeat with remaining potatoes and cream.

Bake for about 1 hour 10 minutes 160°C.

  • Place the garlic butter ingredients in a bowl and mix together. Shape into sausage and tightly wrap with cling film and freeze until firm. You can make it day before. When ready slice  8 even pieces.

Use sharp knife to make a deep pocket inside the breast. Push 2 of garlic butter discs inside each chicken breast. Press to flatten and reseal.

Mix breadcrumbs and parmesan on one plate, eggs on another and on third mix flour with paprika and salt. Dip each breast in the flour, egg and breadcrumbs. Repeat so each Chicken Kiev has a double coating. Chill for 30 minutes.

Preheat oven to 180° C.

Heat the oil in a large frying pan and fry the Chicken Kievs for 2 min each side until golden (my were more than golden). Transfer to baking tray and cook about 30 minutes. You can as well sprinkle grated cheese on top!

Serve with veg. Enjoy!!!

Mango And Halloumi Salad

Halloumi and mango, what a delightful combination ! Quick, delicious and good for you.

Ingredients

  • mango, skinned & cut into thick slices
  • juice ½ lime
  • 1 tsp olive oil
  • 1 aubergine, cut into thick slices
  • halloumi, cut into thick slices
  • 1 large roasted red pepper, sliced
  • handful rocket salad
  • 2 tbsp natural yoghurt
  • 1 tbsp mayonnaise

Method

Drizzle the mango slices with the lime juice.

Mix together yoghurt and mayonnaise.

Heat a griddle pan. Sprinkle the aubergine slices with olive oil and fry for 3-4 minutes on each side. Set aside, keep warm. Next fry the halloumi on each side until brown lines are visible.

Now mix everything in a large salad bowl and enjoy !!!!! Really delicious 🙂

Nutty Bars

Very delicious and simple nutty bars nice with the glass of milk.

Ingredients

Makes 12 bars

  • 225 g salted butter, at room temperature
  • 175 g golden caster sugar
  • 300 g plain flour + 1 tbsp extra
  • 1 tsp almond extract
  • 75 ml double cream
  • 50 g whole blanched almonds
  • 50 g pecans
  • 50 g blanched hazelnuts, halved
  • 50 g glacé cherries, sliced
  • 50 g died apricots, sliced
  • 25 g sultans
  • 2 tbsp honey
  • zest 1 lime
  • 50 g dark chocolate

Method

Line 20 cm square tin with baking parchment.

Put 200 g of the butter,100 g of the sugar and almond extract in a bowl and mix until smooth. Press the mixture into the base of tin, chill for minimum 30 minutes.

Heat the oven to 180° C. Bake for 25- 30 minutes.

Put the remaining butter, sugar and 1 tbsp flour in a sauce pan and melt. Stir in the cream until smooth, then add the nuts, fruits, zest and honey. Mix together.

When the base is ready put the hot mixture all over the top. Bake for another 20 minutes or until the top is golden. Cool.

Melt the chocolate in a bowl over a pan with hot water. Drizzle all over the top.

Banana Bread

If you do not know what to do with brown bananas try this banana bread.

Ingredients

  • 140 g butter
  • 140 g light muscovado sugar
  • 2 eggs
  • 3 very ripe bananas
  • zest 1 lemon
  • 1 tsp vanilla essence
  • 85 g buttermilk
  • 225 g self-rising flour
  • 2 tsp ground cinnamon
  • ½ tsp bicarbonate of soda

For the raspberry compote

  • juice 2 oranges
  • 50 g sugar
  • 500 g raspberries

Method

Preheat oven to 180° C. Grease a loaf tin.

In a bowl mash the bananas with a fork and add the lemon zest, vanilla and buttermilk, mix together.

In another bowl mix together butter with sugar until fluffy, then add eggs one at a time. Add the flour, cinnamon and bicarbonate of soda. Mix until combined. Add this into the banana mix. Fold until just combined.

Pour the mixture to the loaf tin. Bake for about 50-60 minutes.

For the raspberry compote, heat the orange juice in a sauce pan, add the sugar and raspberries. Simmer for 10 minutes. Pour over cooled cake!
